There is a salad dressing that shows up in most of the Japanese restaurants in this part of the country (Wisconsin) which seems to be based on mayonnaise, ginger, and grated carrot. I have searched the internet for this recipe and have found many asking but virtually no replies.
I have found one recipe which is close but not quite the taste I am looking for.
½ Cup Mayonnaise
¼ Cup Rice Vinegar
¼ Cup Corn Syrup
1 Tbsp. Soy Sauce
½ tsp. Ground Fresh Ginger
1 Small Grated Carrot
Combine all ingredients and blend in food processor.
The problem with this dressing is that the Soy Sauce is too strong (I don’t think there is any in the local versions), and the ginger needs a major increase in quantity. Also, the local version is smoother and less acidic. I have tried many variations and have not found the right recipe. Can someone help.

Miso-Ginger Dressing
1/4 c. rice vinegar
3 tbsp white miso
1 tbsp veganaise to emulsify (or mayo)
1 tbsp fresh lemon juice
2 pressed garlic cloves (roasted if you have it)
1 tbsp finely grated fresh ginger
1 tsp tamari (or to taste)
1/2 c. (or to desired consistency) grapeseed or olive oil
add a pinch of sugar if needed

Sat, July 29, 2006 - 9:28 AMthis was a recipe for a vegetable slaw i used for some grilled salmon last night - got it from epicurious.com - i was so surprised to find that it tasted exactly like the dressing used on the cabbage salad @ my favorite japanese restaurant - might be what you're looking for - it was very creamy with the miso & having been emulsified in the blender - but no mayo, which is awesome.
1/4 cup golden miso
1/4 cup honey
1/4 cup water
1 tablespoon fresh lemon juice
1 teaspoon oriental sesame oil
1 teaspoon soy sauce
1 teaspoon minced peeled fresh ginger
1/2 cup plus 2 tablespoons vegetable oil
Combine miso, honey, 1/4 cup water, lemon juice, sesame oil, soy sauce, and ginger in blender; blend until smooth. With machine running, gradually add vegetable oil. Season miso dressing to taste with salt and pepper. -

it is a little different than the others posted and may be worth trying to see if the base flavor is closer to what you are looking for:
Creamy Asian Dressing
1/2 cup mayonnaise
1/2 cup plain yogurt
1/2 cup light corn syrup
1/4 tsp ground black pepper
1 1/2 tsp soy sauce
1/2 tsp ground ginger
1 pinch white sugar
Place all ingredients in small bowl and mix until well combined.
Chill at least 2 hours to blend flavors.
