Good day! I recently tracked down and bought some Daikron. I saw in another tribe a recipe or two for it, but I forgot which tribe, and which thread, so I can`t find it now! Waaaaaaaah! I heard that this is a really healthy vegatable, and I`d like to make something with it.
I think there was a salad and vinegar recipe, but I`m so bad in the brain for remembering if I don`t write stuff down, that I need help! If anyone here has an idea or 10, I`d love to hear from you and try them out.
Cheers all!
Deloris

Tue, May 2, 2006 - 7:54 AMI recall a thread about daikon in the 'herbal medicine' tribe. I pickle shredded daikon and carrots and it goes into Vietnamese sandwhiches. You can also boil it and add to soup (although it's a bit stinky - like cabbage, but more pungent). -

Tue, May 2, 2006 - 8:15 AMA-Ha! Your the lady who first mentioned it! I remmeber something about it smelling strongly, thanks!

Cheers! -

Tue, May 2, 2006 - 12:04 PMHi Deloris! Yes, I'm the one who mentioned pickling daikon in the herbal medicine tribe. >^_^<
I don't mind the smell, but some might. I have a Japanese exchange student friend who always apologizes when she boils it (she likes it in miso) and her host mother complains profusely and sometimes leaves the house all together! I think she was just being dramatic and whiny because it just smells good to me. :)

Re: Daikron dilema!
Tue, May 2, 2006 - 5:34 PMI slice dikon very thin and boil the heck out of it and add it to my curries. Lots of vegi's with no taste + spicy curry powders = Yummy vegi goodness. -

well if you boil the heck out of any vegetable, of course it will have no flavour.
Daikon is a very flavorful vegetable! -

Re: Daikron dilema!
Tue, May 2, 2006 - 11:43 AM"think there was a salad and vinegar recipe"
I bet you're thinking of sunomono. It's a Japanese salad made from daikon and cucumber in a rice vinegar dressing. Here's a simple traditional recipe: japanesefood.about.com/od/sal...uno.htm
The Japanese love daikon and have many recipes and uses for it. Since it can be eaten raw, cooked or pickled, it's a versatile vegetable. It's a popular addition to soups-just slice it or cut it into chunks and simmer it in your stock of choice until tender. This is about as simple as a soup can be: japanesefood.about.com/od/mis...kon.htm Also works just as well in stews and casseroles. Just cook it like you would a turnip or rutabaga.
If you see daikon shoots in your market, these are great additions to other greens in a salad, in sushi rolls, or make a lovely garnish for shellfish, fish dishes or cold poultry preparations. They're peppery and spicy and remind me of a radish on steroids. Use them the same day you buy them for the best flavor and texture. -

Tue, May 2, 2006 - 12:10 PMha ha ha! "radish on steroids" That`s great! Thanks for the links, I`m getting my lazy butt off the computer now to go make some salad with my Daikon (yes, I spelled it wrong the first time)
And Tri, thanks again! How do you pronounce your name by the way, is it Tri like tricycle, or like Tree? It`s cool.
Many hugs to all! -

Re: Daikron dilema!
Tue, May 2, 2006 - 2:22 PMIs it pickled already (yellow watery package)
if so you can always dice it (coarse) and serve it atop rice with seseme seed and bonito flakes, maybe some crab... or better yet make sticky rice and it is wonderful served in sushi rolls... beleive it or not I find it very nice rolled in with of all things ham... the tastes blend in well together.
Experiment, don't be afraid -

Re: Daikron dilema!
Wed, May 3, 2006 - 6:09 AMno, I bought fresh. I get to experiment again though, my angel had drank all the sake and ate all the cucumber, so I didn`t make the salad after all. I hope it lasts for a day or two, if not, it`s a veggie. Not too expensive, I`ll just buy more!
Good with sticky rice you say? hmmm...that it would be, I`m sure! And the curry idea sounds yummy too, I love curries, but I do prefer my veggies a tiny bit crunchy even when cooked. Don`t really know if that`s the right way or not, but it`s the way I like it!
Cheers!
ps, Tri, I asked because I had a friend named Tree in BC. She was cool too!

Re: Daikron dilema!
Wed, May 24, 2006 - 9:23 PMthe best simple use of daikon that i know of is to slice it somewhat thin and use it in place of a chip to eat quacamole dip or other dips. really yummy that way! -

Re: Daikron dilema!
Thu, May 25, 2006 - 12:12 AMmy mom was always addicted to this ginormous radish -- she shaved it thin with a vegetable peeler then salted it and got busy with a giant bowl. now I like it that way yum! I'm trying to grow it but damn the grubs seem to always snack on it first...
