Turkey-day asian style?

I know that the side of my family from Sicily which immigrated here two generations ago embraced the American custom of Thanksgiving but did everything that was traditional for that day with an Italian twist to the ingredients.

I am sure it is the same with Asian-Americans who enjoy the holiday of Thanksgiving, that they make the Turkey and the Stuffing, the gravy, the potatos or the ham.... but do it all with a flair which still carries the essence of asian style cooking as well. If there are any people who are naturalized Asian-Americans in this tribe who that presumption resonates with, what do you make for that holiday, how is your turkey and other traditional American dishes unique? Are other traditions around the table this holiday mixed with any traditional asian customs or holidays around that time of year?

Growing up Vietnamese, Thanksgiving was always very interesting up until my sister and I started to cook most of the meal. My parents tried, but it was definitely not their expertise. I recall very interesting versions of stuffing (no bread used at all), but the tradition that carried out every year was what my dad did with left over turkey - he always made glass noodle and turkey curry stir fry. That was my favorite part!
