&#xD;
I make oxtail soup with lotus roots.  Can't tell you the exact proportions I use, but it's something like this:&#xD;
&#xD;
1 oxtail, cut into 2" pieces and washed&#xD;
3 lotus roots, peeled and sliced into 2 mm slices&#xD;
Fish sauce, to tase&#xD;
Salt, to taste&#xD;
Steamed rice&#xD;
&#xD;
Boil the oxtail in a big pot of water.  Then reduce and simmer the pot for about 3 or 31/2 hours until tender, skimming the surface of scum every 15 minutes or so,.  Add the sliced lotus roots, fish sauce and salt.  Simmer for another 1/2 hour to 45 minutes or until when the meat falls off gently pulled off the bone.  Serve in a bowl with some steamed rice.  Add extra fish sauce to the individual bowls, if desired.&#xD;

It's rather plain, but it's a hit at home here.&#xD;

      <description>Penny, I make mine like beef stew- coating in flour and searing the outside in a lil oil, then adding six cups of stock and veggies, bring up to a boil and reduce to rolling simmer for four hours. My daughter loves it, but her stepdad says it is the only thing I make he is not into! Aaaah cultural differences! Oh and my mom would add star anise.&#xD;
Sounds good! I might just be going to the butcher today :)</description>
