Ever since our Japanese Host student made these delightful pizza-pancakes I've been working on perfecting my recipe. She used a pre-made dry batter mix and then added the vegetables and shrimp, but since I don't have access to this batter (her mother sent it from Japan) I've been making it from scratch.
However, depending on the region of the recipe the end result can be pretty different. I heard that the Osaka region is famous for having the BEST Okonomiyaki. Anyone here have a recipe from that region?

Main ingredient is cabbage...after that it's all about adding in what you want, that's what my grandmother told me when she taught me to make it. Osaka style is easier since it's a nice little pancake and you just mix everything in. Hiroshima style is all about layers. So you have a layer of the batter (potato flour) another layer of cabbage then shrimp, yaki soba noodles, egg then another layer of batter, fish flakes. Don't forget the yummy sauce. I'm sure there's more in there...but like I said, it's all about putting in what you like. -

Sat, June 24, 2006 - 11:04 PMI didn't know that about Hiroshima style. Interesting. I found a Japanese Sweet Potato flour that works quite well and even gives it a slightly crispy exterior (which I LOVE), but even with the cabbage, mung bean sprouts, green onions, toasted Nori flakes and shrimp that I add, they take a pretty long time to cook through without having a doughy center. I can't imagine how the Hiroshima version would tackle this dillema!
Oh, and after many failed attempts, I finally worked out a decent homemade version of Okonomiyaki sauce. That's probably the flavor I love most in this dish...the pancake itself is incidental. -

Fri, July 28, 2006 - 6:09 PMWell with Hiroshima style, it's all about making the batter a little thinner...it's been a few years since I've made it. But it ends up not beind doughy at all. I'm going to visit my grandmother next month so I'll ask her if she has any tips to making it. I don't remember it taking that long. She made 4 of them for lunch and I swear it was fairly quick once everything hit the pan. I also have her recipe at home somewhere. When I find it, I'll post it.

Sat, July 29, 2006 - 8:16 AMPizza-pancake? I've only ever had it Hiroshima style (since I used to live around there), I had no clue there was another way to do it. So, was it like one of those omlette things that you don't fold, but just mix everything in and cook on low til it's done (I'm sure there's a word for that, but I can't think of it)? That sounds a lot easier than the Hiro style ones. Maybe someone on the Japan tribe has a recipe. -

Fri, August 4, 2006 - 1:04 PMyeah, it's basically an omlette you don't fold. My grandmother puts shrimp, noodles, mushrooms...and other yummy goodness in it. If I can actually remember to look it up when I get home, I'll post the recipe tonight.
