  there is "amaranth to zucchini" which is not specifically asian, but is pretty thorough and neat.
  
  a lot of asian cookbooks will have info on this subject without being specifically dedicated to it.
  
  and, yes, i have seen some books like you describe but for the life of me cannot remember the names of any.

  This "quick and easy" cookbook series has great pictures and explanations of ingredients in each book. This is the link for the thai cookbook - I also own the Vietnamese and have been planning on buying the Japanese Homestyle and Korean books. It's a great series and very clear - great pictures.
